Breakfast with Eggs à la Coque

My daughter just left to start University in another city and it comes spontaneous and by instinct like most mothers would (particularly Italian ones that are very demanding and always worried even when your children are independent, married and have their own children!), the thought of her embarking on this new journey, managing her daily meals on her own, brings a mix of emotions. I find myself pondering about her diet - will she be able to eat enough nutritious food, ensuring she maintains a balanced and healthy diet amidst the challenges of university life?

As a mother, the concern lingers in my mind. Will she be able to resist the temptations of unhealthy fast foods that often seem like a convenient option for busy students? I hope she remembers the importance of nourishing her body with wholesome meals that will fuel her mind and body as she navigates through the demands of academics and social life.

It's a natural instinct for a mother to worry about her child's well-being, especially when they are away from home. I find solace in sending her off with the knowledge and skills to make wise food choices, hoping that she embraces a healthy lifestyle even in the midst of newfound independence.


Breakfast with Eggs à la Coque is like the breakfast MVP in my daughter's world! She's got a major soft spot for these runny delights. So, while she is away from home, I wanted to remind her that this could still be a great option to kickstart her busy day.


 

Good to know

Eggs are a high source of proteine, vitamines A, D, E and those of B complex and minerals like phosporus, selenium and zinc. They are enrich with omega-3 and omega-6 fatty acid.

Resuming, eggs are a nutritious and balanced food. Eggs à la coque, or soft boiled eggs, is one of the best ways to assume all the nutrients while destroying any dangerous bacteria.

 

Ingredients

Eggs, as many as you like but 2 is the ideal!

 

Let's Jump to the Method

  1. Fill a small saucepan with cold water.

  2. Bring the water to a boil over medium heat.

  3. Once boiling, gently put the eggs in with a tablespoon and simmer for about 3-4 minutes.

  4. Remove the eggs from the water and put them under the cold tap water to cool down. The cold water helps to peel easily the eggshell.

  5. Using a spoon, carefully remove the tops of the eggs.

  6. Season with salt and pepper, and serve hot with buttered toast for dipping.
