Caesar Salad

Caesar Salad   is a very popular dish worldwide. Delicious, fresh and full of Italian inventiveness, it was created between Mexico and USA by the brothers and restaurateurs Caesar and Alex Cardini in the early 20th century. Since then, and thanks to the Cardini’s brothers, we still have the pleasure to order it in any restaurant, brunch bar, and of course make it at home.

Good to know

For making Caesar Salad, flatten the chicken breasts using a meat tenderiser hammer or put the meat between two sheets of cling film and with a rolling pin gently beat to flatten it up to 1cm thick.

 

Ingredients 4-6 servings

  1. Chicken breasts, sliced and flatten, 3-4

  2. Romaine lettuce, 2 hearts

  3. Cherry tomatoes, 10-15

  4. Bread, ciabatta or farmhouse bread, 4 slices cut in cubes 1.5-2 cm

  5. Garlic, chopped, cloves, 2

  6. Anchovies, chopped fillets in oil, 4

  7. Mayonnaise, 4-6 tbsp

  8. Lemon juice, 2 tbsp

  9. Parmesan cheese, shredded, 50 g

  10. Cold water, 5-6 tbsp

  11. Extra virgin olive oil, 2 tbsp

 

Let's Jump To The Method

Have all ingredients ready to use: put them in the working space.

  1. Flatten the chicken breasts 1cm thick and season with salt and pepper.

  2. In a non stick frying pan big enough, brush in the olive oil and fry the flattened chicken breasts for 3 minutes each side until browned. Put apart to rest.

  3. Start making the dressing for the salad. Put the garlic and the anchovies in a mortar and reduce to a paste. Add the mayonnaise, the lemon juice and stir together. At last, add the water: it should look like a pourable liquid-creamy sauce.

  4. Get ready the romaine lettuce washing it very well. Separate each leaf and finally drain them with a salad spinner or gently dry them out with kitchen paper/clean kitchen towel.

  5. Cut the leaves roughly and put them in a salad serving plate.

  6. Toast the slices of bread at your taste (ciabatta or farmhouse bread) and cut it into cubes and add them to the lettuce.

  7. Add the tomatoes, the bread and the shredded parmesan cheese.

  8. Cut the chicken in strips 1.5cm thick, add and toss with all the other ingredients in the salad serving plate.

  9. Pour the dressing. Toss again and it’s ready.

  10. Serve the Caesar Salad and Buon Appetito!
