Chicken Curry at Home: An Easy Made Spiced Delight for Your Palate

Here, I'm going to travel away from the Italian cuisine, though this easy Chicken Curry is as well in the menu of my house as it is very much loved by everyone in the family. So, I offer this recipe to you too. It is a super easy chicken curry recipe and even if you think that there are far too many ingredients, compared to other Indian recipes, this one has very few.

Chicken Curry is a warming meal that will enrich your sense of taste with an exotic, spicy fragrance. Served with Basmati rice and accompanied of fresh fruits (bananas, peaches, mangos), it creates a full meal.This is the first spiced meal my children had and they loved it, wanting it every time a little more hot.

Good to know

Curry is a mix of these main spices: coriander, turmeric, cumin, and red chilli.

In Britain, curry dishes started to be popular from the 18th century , when British traders, who had been in India, returned to Britain with the new spices. In Haymarket, in the Norris Street Coffee House,  curry was served for the first time in 1733 , since then it never left us. Today, it is considered one of the best dishes worldwide. Even in an Italian mother’s menu like mine there is Chicken Curry!

 

Ingredients 4 serving

  1. Skinless chicken breasts, sliced into 2 cm strips, 4

  2. Onion, finely chopped, 1

  3. Ginger root, grated, 2 tbsp

  4. Garlic cloves, crushed, 2

  5. Red chilli, deseeded and finely chopped, 1.5

  6. Ground cardamon, 1.5 tsp

  7. Ground cloves, 1.5 tsp

  8. Medium curry, 1 tbsp

  9. Hot curry, 1 tsp

  10. Turmeric, 1 tbsp

  11. Ground cumin, 1 tsp

  12. Chicken stock, 450 ml

  13. Mango chutney, 2 tbsp

  14. Flour, 1 tbsp

  15. Double cream, 100 ml

  16. Sunflower oil, 2-4 tbsp

  17. Salt and pepper

 

Let’s jump to the method

  1. Get ready all the ingredients.

  2. Heat 2 tbsp of sunflower oil and brown the chicken strips. Toss them while cooking to get an even browning. Then, put the meat apart in a plate and season with salt and pepper.

  3. Add the onion to the same frying pan. Fry it for few minutes until golden. Add more oil, if needed.

  4. Add to the same frying pan the ginger, the garlic and the chilli. Fry for about a minute.

  5. Now, add the ground spices too: cardamon, cloves, medium curry, hot curry, turmeric and cumin. Fry for one minute at low heat.

  6. Sprinkle the flour on top of the spices and stir in the chicken stock. Bring to a boil until thickened.

  7. Add the chicken strips, the mango chutney and cook for 5 minutes until the meat is tender.

  8. Add the cream and cook for 2 more minutes.

  9. Sprinkle with fresh coriander and... it's ready!

  10. Accompany this delicious Chicken Curry with sliced fresh fruits like bananas, peaches, mangos. And on top of Basmati rice, of course.

  11. Serve and enjoy this delicious Chicken Curry !
