Delicious and Easy Tagliatelle with Salmon and Broccoli

Tagliatelle with Salmon and Broccoli is one of my daughter’s preferred dishes and if she has the chance to choose what to eat, for sure she’ll ask for this dish! Simple and rich in taste, it will open up your heart to want a little more. It’s also an excellent ‘primo piatto’, or first course, which can forgo many main fish dishes.

Good To Know

What makes Tagliatelle with Salmon and Broccoli delicious is the combination of the ingredients: they match together gloriously and they will warm up the winter days and will refresh the souls in summer. Good to eat and easy to prepare, what more one could ask?

 

Ingredients 4 servings

  1. Fresh salmon, 3 fillets

  2. Broccoli, 300 g

  3. Double cream, 200 ml

  4. White wine (optional), 60 ml

  5. Fresh tagliatelle, 500 g

  6. Onion, 1 small

  7. Extra virgin olive oil (EVO), 4-5 tbsp

  8. Salt and pepper

 

Let’s jump to the method

  1. Set the oven at 200ºC

  2. Get all the ingredients ready.

  3. Wash first the salmon and broccoli under the running tap water. Place them in different containers.

  4. Brush the salmon fillets with some olive oil and place it in an oven proof dish. Season it with salt and pepper. Cook in the oven for about 8 minutes, then take it out and put it aside.

  5. In the meanwhile, cut the broccoli in florets roughly 3 x 4 cm (you don’t need to measure this, just go with estimates!).

  6. Finely chop the onion.

  7. Put a large pot of water to boil to cook the tagliatelle later on.

  8. In a large frying pan, add 4-5 table spoons (tbsp) of olive oil and warm it up until it starts lightly bubbling, then add the chopped onion, light fry it until golden, not burned.

  9. Add the broccoli and stir together with the onion. Add half glass of water and cover completely with a lid. Low down the heat to medium-low.

  10. After 5 minutes, check if the broccoli is done. It must not be too soft, but let’s say ‘al dente’.

  11. Then, add the salmon cut in small bites or cubes, stir all ingredients and cook all together for 5 minutes.

  12. Season with salt and pepper, add the white wine. Let the alcohol evaporate, then pour the cream in and let it slowly becomes a little dense. It will take more or less 4 -5 minutes and the dish is ready.

  13. Now that you have the sauce ready and the water is boiling, you can add the salt to the water and then the tagliatelle. Ideally, for every 100 g of pasta you should use 1 litre of water and 10 g of salt for each litre.

  14. Enjoy Tagliatelle with Salmon and Broccoli and Buon appetito!
