Veggie Cauliflower Steak

The Veggie Cauliflower Steak is simple to prepare and can be enjoyed on its own or served alongside any other main dish as a side.


When it comes to satisfying vegetarian meals, few things are as rewarding as a well-prepared cauliflower steak. This innovative dish takes a humble vegetable and transforms it into a hearty and flavourful main course that even meat-lovers can enjoy.

By slicing a head of cauliflower into thick steaks and roasting or grilling them with a mix of herbs, spices, and olive oil, you can create a dish that is not only delicious but also visually appealing.

Cauliflower steaks are a versatile option that can be customised to suit a variety of flavour profiles. You can marinate them in a tangy balsamic glaze, coat them in a spicy harissa rub, or simply season them with salt, pepper, and garlic for a more classic taste. Here is my Italian version.

Cauliflowers are not only amazing vegetables but also incredibly versatile in the kitchen. They belong to the cruciferous vegetable family, known for their numerous health benefits. Packed with essential nutrients like vitamin C, vitamin K, and folate, cauliflowers are a powerhouse of goodness. These vitamins play a crucial role in boosting the immune system, promoting healthy bones, and supporting overall well-being. Low in calories and high in fiber, making them a great choice for those looking to maintain a healthy weight or improve digestion. They are also rich in antioxidants that help reduce inflammation and lower the risk of chronic diseases. When it comes to cooking, cauliflowers can be roasted, steamed, mashed, or even turned into a delicious cauliflower rice.

 

Ingredients for 2 servings

  1. Cauliflower, 1, cut in slices

  2. Onion, 1 small, finely chopped

  3. Garlic, 2 cloves, finely crushed

  4. Thyme, 1 fresh stalk leaves or 1 tbsp dried one

  5. Oregano, 1 tbsp

  6. Sweet paprika, 1 tbsp

  7. Parmesan cheese, 150g grated

  8. Extra virgin olive oil, 2-3 tbsp

 

Let's Jump To The Method

  1. Begin by washing the cauliflower thoroughly under running water.

  2. Switch on the oven at 200°C.

  3. Trim the green leaves, leaving the cauliflower stem still connected to the crown.

  4. Slice vertically into thick pieces measuring about 2 cm in width. Ensuring that every piece is attached to the stem is crucial to preserve the steak-like shape. You will, however, have some loose pieces in its ends.

  5. Sauté the onion and the garlic until just golden, then incorporate the small loose cauliflower pieces and cook for approximately 8 minutes until very soft. Set aside.

  6. In a small bowl combine olive oil, thyme leaves, oregano, and sweet paprika. Mix well, then incorporate the fried onion with the soft loose cauliflower pieces, and finally add the Parmesan cheese. Adjust with a little more oil if necessary.

  7. Get an oven tray ready lining it with oven paper.

  8. Place the thick cauliflower slices on the oven tray.

  9. Brush the oily mixture of herbs, parmesan, and cauliflower pieces on the top and sides.

  10. Next, sprinkle a generous portion of grated Parmesan cheese over the 'steaks' and drizzle a touch of extra virgin olive oil as a final touch.

  11. Bake it for about 20 minutes or until the stem feels soft.

  12. It looks good, it tastes even better. Buon Appetito!
